Power Salad

We often  feel like having a salad that is powerful enough to be both  nutritious and delicious. You might notice we are chickpea fans at Poquio’s Kitchen! Well, they are just so good for you and a great source of vitamins, protein, and fiber that we have no problem inviting them as much as we can. Here is one of our favorite salads that we are sure you are going to love as well.

The Power Salad. Serves 4


2 tbsp of avocado oil

1 cup chickpeas

1 cup cooked brown rice

1 cup of cooked brown quinoa

½ cup of chopped red onion

½ cup of chopped tomato 

1 chopped avocado

Kosher salt

Lemon pepper

Chili flakes

Lemon juice

In a big pan, sauté the chickpeas with the avocado oil until crispy; add the brown rice and quinoa and sprinkle the lemon pepper to your taste. Transfer the chickpeas, brown rice and quinoa to a bowl and add the red onion, tomato, and avocado. Mix well together and add salt and lemon juice.

Serve with a drizzle of avocado oil and top it with chili flakes. Enjoy!
