Carne en su Jugo (Meat soup)

One of the most popular dishes in Guadalajara is Carne en su Jugo, a true delicacy that is easy to prepare and perfect for any family party or a cold wintery day!

Carne en su Jugo
Serves 4 people

225 grams of finely diced bacon

1 kilo of beef (sirloin) or any other lean cut of meat

Freshly ground pepper to season the meat

2 cloves garlic, minced

¼ cup cilantro

2 serrano chiles, chopped

4 cups of chicken broth or 4 cups of water mixed with 4 teaspoons of chicken broth * 4 green tomatoes (tomatillos) cooked.

4 cooked green tomatoes (tomatillos) (Optional)

2 cups of cooked berry beans, warm

Finely dice meat into small cubes; place meat in a bowl.

Fry the bacon in a medium-sized skillet over medium heat until crisp, about 8 minutes; transfer the bacon to drain off the grease and use at least 1 tablespoon of the remaining grease.

Add the meat to the pot and cook over medium heat for about 8 minutes, during this time the meat will release some of its juices.

While the meat is cooking, place the minced garlic, onion, cilantro and Serrano chile in your blender with a cup of broth and blend until well blended, this is the broth sauce.

Pour this mixture into the meat, add the rest of the broth, and taste for seasoning with salt and simmer for about 20 minutes or more until the meat is tender.

To serve divide the hot beans into bowls after you add the meat with its broth. Let everyone garnish with the bacon, chopped onion, cilantro and add a few drops of lime juice. Enjoy!
